I'm passionate about chicory - wonderful crunch and great bitter, peppery taste. Wonderful mixed with onion rings, capers and a strong vinaigrette

Perhaps you haven't yet found the right salad leaves for you? Try landcress- like watercress - but without the need for water. Has a good peppery taste. Chinese red mustard is another winter leaf with a bit of bite to it. Mix in with other more bland types.

You could 'wilt' some salad leaves and use them in the same way as spinach in quiches, and rocket makes a great pesto.

I wasn't a big salad fan until I discovered home made dressings! Now I have them most days for lunch!! the swimming might help ease your back pain as well, sounds like a new leaf for you!
So sorry to hear about your nanny. Hope you fell better soon.
